Food Industry Must Do All it Can to Protect the Public PDF Print E-mail
Chicago, IL (May 23, 2007) – The Food and Drug Administration might have a new “food czar,” but much more can be done to protect the public food supply and foodservice operators should play a leading role. That’s the advice of Lee Biars, a food safety consultant and regular contributor to Schofield Media’s Food and Drink magazine.

“We live in a time when heightened awareness of every potential danger to the American public is at an all time high, with the lone exception of our food supply,” Biars writes in the May/June issue of Food and Drink. Only 1 percent of the U.S. food supply is inspected, he notes, and the number of food safety inspectors has decreased by 15 percent in the past four years. “Is this an area where we really need to be making budget cuts?” he asks.

Biars encourages foodservice operators to contact their elected officials and urge them to take this issue seriously. “Next, you should do everything in your power to ensure the food that enters your restaurant is safe to consume,” he writes, laying out several recommendations, including periodic audits of suppliers. Biars is the director of industry relations for Safe Food Solutions.
